Former Brasserie Brixton chefs taking Osaka Ramen space in RiNo

Two chefs, Harrison Porter and Rema Maaliki, are joining forces to open their first solo restaurant in the RiNo neighborhood. The duo, who met while working at Mercantile, are taking over the recently closed Osaka Ramen space to launch Bear Leek, set to open this summer at 2611 Walnut St.
Bear Leek, named after the German translation of “ramp,” aims to offer a bistro-style dining experience that is both refined and exciting. The menu will feature unique dishes that reflect Porter’s playful and unexpected approach to food.
While some details are still being finalized, the chefs have confirmed that every meal at Bear Leek will start with house-made bread and charred leek-butter in the shape of a teddy bear, and end with a bruin-molded vanilla cream and passion fruit semifreddo.
Maaliki, who will be the chef de cuisine at Bear Leek, brings a wealth of culinary experience from her time at Mercantile, as well as stints in Melbourne and Seattle. Porter, on the other hand, has worked in kitchens in New York City and Melbourne before returning to Denver.
With a focus on shared dining experiences and community, the menu at Bear Leek will feature a collection of the chefs’ culinary journeys and experiences. The restaurant will maintain the layout of the former Osaka Ramen space, with different sections catering to various dining atmospheres.
The underground feel of the restaurant, reminiscent of hidden spots in Melbourne and Brooklyn, adds to the charm of Bear Leek. The chefs are excited to bring their unique culinary vision to the vibrant RiNo neighborhood.
